This Grilled Peach and Apricot Salad Is Our New Favorite Lunch

Here's everything you need for this savory grilled apricot and peach salad. This recipe makes four servings.

Ingredients to Gather

1 bunch kale, destemmed
4 apricots, halved
4 peaches, halved
1/4 pound prosciutto, thinly sliced.
1/4 cup feta cheese
1/4 cup olive oil
1 to 2 tablespoons lemon juice

Directions to Follow

Preheat the grill. While it warms up, tear or chop the kale leaves into bite-size pieces and place those in a large salad bowl. Add a pinch of salt and a tablespoon of olive oil and massage the kale, kneading it for a minute or so until it softens.

Next, combine the rest of the olive oil and the lemon juice with a whisk, and then taste and adjust accordingly before setting aside. Take the prosciutto and cut it into small pieces and set aside, and then once the grill is hot, lightly brush the apricots and peaches with a neutral oil and then grill them with the cut side facing down until they're deeply caramelized. When they're done, toss the fruit with the prepared dressing and then crumble the feta on top. Add the prosciutto and fruit, letting the juice drip down onto the kale, and then serve.

And you're done! We really like to serve this salad with a some crusty bread, preferably nice and toasty and with plenty of butter. Yum!
