This Hearty Chicken & Rice Soup Really Hits The Spot On A Cold Winters Day!

Want that hearty soup, that is good for you? Well, you're not going to go wrong with this one. It has all the yummy goodness with a healthy twist!

Here Is What You Need: 

  • 8 cups low-sodium chicken broth, divided

  • 1 medium onion, chopped

  • 3 medium carrots, chopped

  • 2 stalks celery, chopped

  • 2 cups water

  • 1 cup long-grain brown rice

  • 1 small chicken breast, cut into 1/2-inch cubes

  • 1 bay leaf

  • 1 bunch kale or collard greens, thick stems removed and leaves thinly sliced

Here Is How You Make It: 

  1. In a large cooker, over med/high heat, bring 1/2 cup broth to simmer.
  2. Add the onion, celery, and carrots and cook about 8 minutes or til onion is translucent, occasionally stirring.
  3. Add the rest of the broth, rice, water, chicken and a bay leaf. Bring to boil.
  4. Reduce the heat to simmer, cover and cook for approx. 35 minutes or til the rice is tender and chicken is cooked all the way. Remove the bay leaf and stir in the kale.
  5. Cook for another 3 to 5 minutes.
