This Holiday Treat May Get Made Fun Of A Lot, But It’s Truly Delicious!

While many will choose to add this to their dinner buffet during the holidays, there is nothing wrong with saving this recipe for use throughout the year. Think about all the possibilities! If you aren't so big on double chocolate desserts, you can substitute and even take this creation into a new form. Based on the occasion, there are so many possibilities.

Sit back as we give you the basics.

What you are going to need:

For the Cake:

  • 6 eggs

  • 1 box of Betty Crocker™ SuperMoist™ devil's food cake mix

  • 1/2 cup water

  • 1/4 cup vegetable oil

  • 1 tablespoon powdered sugar

 

For the Rich Chocolate Frosting:

  • 1/2 cup whipping cream

  • 1 cup semi-sweet chocolate chips (6 oz)

  • 1 tablespoon corn syrup

  • 1/4 teaspoon vanilla

 

For the Filling:

1 container Betty Crocker™ Whipped vanilla frosting

Let's get a'loggin':

  1. Heat oven to 375°F, lining bottom only of a pan with foil or waxed paper
  2. Spray with baking spray with flour, placing paper baking cup in muffin cups.
  3. Beat eggs with electric mixer on high speed for 5 minutes. They will be thick and lemon colored.
  4. Add cake mix, water and oil, beating on low speed for about 30 seconds.
  5. Continue beating the mix on medium speed for an additional minute.
  6. Pour 3 1/2 cups of batter into the pan.
  7. Divide remaining batter amongst muffin cups.
  8. Bake in oven for about 14 to 16 minutes. The cake should spring back when touched in the center.
  9. Turn cake upside down and sprinkle on 1 tablespoon powdered sugar.
  10. Carefully remove foil.
  11. While still hot, carefully roll up cake and towel from narrow end.
  12. Allow the cake to cool for about an hour, the cupcakes for 10 minutes.
  13. Microwave whipping cream, uncovered on high for a minute (until it starts to boil).
  14. Stir in chocolate chips and corn syrup, allowing to stand for 3 minutes.
  15. Beat with wire whisk until smooth.
  16. Beat in vanilla and put it in the fridge for an hour, stirring every 15 minutes.
  17. Unroll the cake and spread filling over the cake. Roll it back up.
  18. Frost the cake. Drag fork across to look like a log.

Now that you have a log, be sure not to eat it all at once! If you want to get creative, you can decorate with a moss of coconut (colored with green food coloring) or add decorations, such as butterflies and flowers. The choice is yours.
