This Honey Glazed Pork Tenderloin is Perfect for Small Gatherings

Here's everything you need for this succulent honey glazed pork tenderloin. This recipe makes four servings.

Ingredients to Gather

1/4 cup honey, plus more for drizzling
1/4 cup sherry vinegar
1 tablespoon whole-grain Dijon mustard
1/4 teaspoon ground cayenne pepper
1 (1- to 1 1/2-pound) pork tenderloin
1 teaspoon kosher salt, plus more as needed
3/4 teaspoon freshly ground black pepper, plus more as needed
1 tablespoon butter
1 tablespoon oil
2 teaspoons finely chopped fresh rosemary (optional)

Directions to Follow

Arrange a rack in the middle of the oven and heat to 400ºF.

Whisk together the honey, vinegar, mustard, and cayenne in a small bowl; set aside.

Trim any silver skin from the tenderloin. Turn under the tapered end and tie it in place with kitchen twine, or leave it loose to create a portion that will be very well-done. Pat the pork dry with paper towels and sprinkle generously with the measured salt and pepper.

Heat the butter and oil in a large, ovenproof skillet over medium-high heat. Add the pork and cook until well-browned on all sides, turning with tongs, about 5 minutes total.

Place in the oven to roast until an instant-read thermometer inserted horizontally into the end of the pork registers 140°F, about 12 minutes. Remove the skillet from the oven and transfer the pork to a clean plate.

Place the skillet over medium-high heat. Pour the honey mixture into the skillet and stir to loosen any browned bits.

Once the liquid starts sizzling, place the pork and the juices back into the skillet. Next, carefully tilt the skillet so that the liquid goes to one side of the pan and pools up, and then keep spooning the liquid on top of the pork for about 2 minutes until the liquid has thickened and become a syrup-like glaze. Next, move the pork to a serving platter and let it set for 5 minutes. To serve, cut the pork crosswise into slices, and then top it off by drizzling honey on top and then sprinkle with additional salt, pepper, and rosemary if desired.

Wow! This honey glazed pork tenderloin is absolutely mouthwatering. It goes well with pretty much anything, but we like serving it with some hearty mashed potatoes on the side and a vegetable. Delicious!

Rare pork is not very desirable in these parts.
