- 2 tablespoons neutral oil, such as canola or grapeseed oil
- 4 – 5 medium russet potatoes
- 3 leeks
- 6 cups vegetable stock
- Kosher salt, to taste
- 1 to 2 tablespoons lemon juice
- 1/2 cup heavy cream
- 1/2 cup crème fraiche
- 1/3 cup minced parsley or chives
The Step By Step Directions To Follow:
- Heat oil over medium heat. Add leek, potato.
- Cook, stirring occasionally 8 – 12 minutes.
- Add vegetable stock, bring to boil. Reduce heat to low, simmer 30 – 40 minutes.
- Blend until smooth.
- Add cream, season to taste with salt, lemon juice.
- Garnish with a dollop of crème fraiche and a healthy sprinkling of parsley.
