This Incredible Potato Leek Soup Is Straight From Julia Child’s Cookbook & It Tastes Fantastic!

This famous Potato leek soup makes enough for six servings but you can always double the ingredients if you want plenty left over to enjoy again later. It takes about eight to twelve minutes to prepare and another thirty to forty minutes to simmer, but it will taste so good that you won't mind waiting.

Let's Get Started!

The Ingredients To Gather:

  • 2 tablespoons neutral oil, such as canola or grapeseed oil
  • 4 – 5 medium russet potatoes
  • 3 leeks
  • 6 cups vegetable stock
  • Kosher salt, to taste
  • 1 to 2 tablespoons  lemon juice
  • 1/2 cup heavy cream
  • 1/2 cup crème fraiche
  • 1/3 cup minced parsley or chives

The Step By Step Directions To Follow:

  1. Heat  oil over medium heat. Add  leek, potato.
  2. Cook, stirring occasionally 8 – 12 minutes.
  3. Add  vegetable stock, bring to  boil. Reduce  heat to low, simmer  30 – 40 minutes.
  4. Blend until smooth.
  5. Add  cream, season to taste with salt,  lemon juice.
  6. Garnish with a dollop of crème fraiche and a healthy sprinkling of parsley.
