You do not have to use these types of mushrooms you can always go for another type however, you will take away from the class of this dish. Please do not skimp out on the Truffle Oil – that is the best part.

How To Prepare:
- To start, you'll want to get your pan ready by melting some butter and heating some oil over medium heat. Throw in the onion and sauté until soft for about five minutes, or so. Toss in some garlic and thyme and let the flavors dance together until the kitchen is full of fragrance. This should only take a minute.
- Next, you'll want to add the mushrooms and let them caramelize and turn into a beautiful golden brown. Pour in the wine to deglaze the pan and continue to cook until there is practically no liquid left. Taste throughout the cooking process and add salt and pepper as needed. Remove from heat and toss in some parsley. Incorporate the gruyere and parm into the mucks and set aside.
- Now that your filling is ready to go, it's time to make a grilled cheese! Start by buttering the bread and place in your pan, buttered side down. Spoon that mixture onto the slices and bread. Once the bread is browned and the cheese mixture is nice and gooey, sandwich it together, and voila!
Note: Enjoy this sandwich with a buttery Chardonnay to truly make this an adult meal. Grilled cheese sandwiches aren't just for kids anymore. Save some of that truffle oil and parsley to sprinkle over some french fries — you'll go nuts over how good it tastes.
