This One-Pan Chicken & Potato Recipe Is All The Way From Spain! Have You Tried It Before?

This delicious Spanish dish makes enough for six servings but if you want leftovers to enjoy later, just double the ingredients. It would be great served over rice or some delicious bread but feel free to serve it any way you like.

The Ingredients To Gather: 

  • ½ cup olive oil
  • 1 large yellow onion
  • 3 cloves garlic
  • 5 ripe tomatoes
  • ½ of a large eggplant
  • 1½ teaspoon salt
  • 1½ lbs. chicken breast meat
  • 1 large Russet potato
  • salt and pepper to taste
  • 1 teaspoon all purpose seasoning
  • ½ cup fresh parsley leaves
  • crusty bread or rice for serving

The Step By Step Directions To Follow:

  1. Heat olive oil over medium high heat. Add onions, garlic. Scoop juices, seeds, and flesh out of the tomatoes into the pan.
  2. Add eggplant pieces, simmer mixture for 5 minutes or until everything is soupy-like and softened and very good smelling.
  3. Place scooped out tomato halves over sauce, open side down.
  4. Simmer for a few minutes until the tomatoes have steamed and softened.
  5. Break them up in the pan, simmer for another 5-10 minutes to get all the flavors real nice and yummy.
  6. Transfer to a blender or food processor, puree until mixture reaches your desired consistency, and stir in the salt.
  7. Chicken and Potatoes: In the same pan, add one more quick drizzle of olive oil, add chicken and potato slices.
  8. Sprinkle with salt and pepper and seasoning.
  9. Saute for a few minutes on each side until they are browned.
  10. Add sauce back to the pan, cover, and simmer for 10 minutes or until the chicken and potatoes are fully cooked.
