This Recipe Takes Ordinary Scrambled Eggs To A Whole New Level!

Here's everything for this spicy and savory Mexican skillet scramble. This recipe requires 15 minutes total time and makes four servings.

Ingredients To Gather:

  • 8 eggs
  • 2 tbsp. vegetable oil
  • 2 corn tortillas, sliced into 8 wedges
  • 1 onion, sliced into half moons
  • 1/3 lb. ground beef
  • 1 tsp. paprika
  • 1 tsp. chili powder
  • kosher salt
  • Freshly ground black pepper
  • 1/2 c. shredded Cheddar cheese
  • 1/2 c. shredded Monterey Jack cheese
  • 1 c. cherry tomatoes, quartered
  • 1/4 c. pickled jalapeños
  • 2 tbsp. Chopped cilantro
  • Guacamole, for serving (optional)
  • Sour cream, for serving (optional)

Directions To Follow:

Start by whisking the eggs together in a medium-sized bowl, blending until the mixture is frothy. Next, heat the oil over medium heat in a large skillet, and then add the tortilla wedges and fry for about 2 minutes on each side or until they're golden-brown, and then drain them on paper towels. Next, reduce the heat to medium and then add the onions, sauteing them for between 5 and 7 minutes or until they're soft. After this, add the ground beef, breaking it up with a wooden spoon, and then saute until the meat is browned and cooked all the way through. Drain it to remove excess fat from the skillet, but keep a little bit of the oil in the skillet to use when scrambling the eggs.

Now, put the beef back into the skillet over medium-low heat, and then stir in the chili powder and season to taste with salt and pepper. Push the meat mixture over so that it's on one side of the pan, and then add the eggs in the other side of the pan. Let all of this sit for about 30 seconds, and then use the wooden spoon to stir the mixture, breaking apart any curds as they form. When the eggs are almost done, add the cheese, tomatoes and jalepenos, and then stir to mix everything together until it's just combined. Season with salt and pepper to taste, and then take the skillet off the heat. Finally, fold in the tortilla wedges and garnish with cilantro.
