One 3½-pound salmon fillet
1½ pounds Romanesco
1 pound Brussels sprouts
12 ounces delicata squash

1. Preheat oven to 450°,line sheet pan with foil. Whisk togethersyrup, tarragon, balsamic vinegar, lemon juice, Dijon, lemon zest, thyme leaves, pepper flakes salt. While whisking, slowly stream in olive oil until an emulsified vinaigrette forms.
2. Lay salmon across center of pan. Toss Romanesco, Brussels sprouts,squash with ⅓ cup of vinaigrette. Spread vegetables in even layer around salmon. Drizzle ¼ cup of vinaigrette over, salmon, season with more salt.
3. Place in oven, cook for 20 minutes. Toss radicchio with remaining vinaigrette. Spread radicchio over vegetables, cook until wilted, 3 – 4 minutes.

Then make sure you heat your oven to its broil setting and allow everything to cook for about two or so additional minutes. Top with your microgreens, tarragon, and thyme.
