This Sweet Potato And Black Bean Casserole Is Comfort Food Done Right And It Is So Incredible!

This casserole makes enough for about eight servings so there should be enough for everyone to enjoy. It takes about fifteen minutes to prepare and about an hour to bake. After one bite you'll see why it is so worth the wait!

The Ingredients To Gather:

Cooking spray or olive oil
2 tablespoons olive oil
1  yellow onion
2 pounds sweet potatoes
1  can fire-roasted diced tomatoes
1  can black beans
3 cups shredded smoked mozzarella cheese
1 tablespoon smoked paprika
1 tablespoon kosher salt
2 cloves garlic

For serving:
Plain yogurt
chopped fresh cilantro

The Step By Step Directions To Follow:

Arrange  rack in  middle of  oven, heat to 400°F. Coat  9×13-inch baking dish with cooking spray or olive oil; set aside.

Heat  olive oil in  frying pan over medium heat until shimmering. Add  onion,cook, stirring occasionally, until softened, 8 -10 minutes. Add  sweet potatoes, cook until just heated through,  5 minutes . Transfer mixture to  large bowl.

Add black beans, drained tomatoes, 1 cup of mozzarella, smoked paprika, salt, garlic, stir to combine. Transfer to  baking dish, spread into  even layer. Sprinkle  with  remaining mozzarella cheese.

Spray  large sheet of aluminum foil with cooking spray or coat with olive oil. Place  foil greased-side down over the baking dish, cover tightly. Bake  30 minutes. Uncover, bake until sweet potatoes are tender, cheese on top is browned in spots, 30 minutes more. Let cool 10 minutes before serving topped with yogurt and cilantro.

    I’ve made something similar. Its made with salsa instead of tomatoes and rolled into a tortilla. Can’t wait to try this version.
