2 tablespoons olive oil, divided
4 boneless, skinless chicken breasts
1 pound cremini mushrooms
1/2 cup sliced sun-dried tomatoes
1 tablespoon fresh rosemary leaves
2 cloves garlic
1/2 teaspoon kosher salt, plus more for seasoning
Freshly ground black pepper
1 (15-ounce) can white beans
The Step By Step Directions To Follow:
Arrange rack in middle of oven, heat to 400°F.
Heat 1 tablespoon of oil in oven-safe skillet with lid over medium-high heat until shimmering. Season chicken on both sides with salt, pepper, add to skillet. Sear until bottoms are golden-brown, 3 minutes. Flip, sear until other side is golden-brown, 3 minutes more. Transfer to plate.
Reduce heat to medium. Add remaining 1 tablespoon of oil to skillet along with mushrooms. Sauté until browned, just tender, 5 minutes. Stir in sun-dried tomatoes, rosemary, garlic, 1/2 teaspoon of salt, a few grinds of black pepper. Sauté for 1 minute more. Stir in white beans.
Nestle chicken breasts in mushroom mixture, cover. Bake 30 – 40 minutes. Serve in shallow bowls, spooning plenty of t broth over chicken and vegetables.
