This Tuscan Chicken Skillet Is So Simple Making It Great For A Busy Weeknight

This recipe makes enough for about four servings but if you want plenty more, you can just double the ingredients. It takes about twelve minutes to prepare and then about thirty to forty minutes to bake. It will smell so good, you'll by dying to try it!

The Ingredients To Gather Are:

 

2 tablespoons olive oil, divided
4 boneless, skinless chicken breasts
1 pound cremini mushrooms
1/2 cup  sliced sun-dried tomatoes
1 tablespoon  fresh rosemary leaves
2 cloves garlic
1/2 teaspoon kosher salt, plus more for seasoning
Freshly ground black pepper
1 (15-ounce) can white beans

The Step By Step Directions To Follow:

Arrange  rack in  middle of oven, heat to 400°F.

Heat 1 tablespoon of  oil in oven-safe skillet with  lid over medium-high heat until shimmering. Season  chicken on both sides with salt, pepper, add to  skillet. Sear until  bottoms are golden-brown,  3 minutes. Flip, sear until other side is golden-brown,  3 minutes more. Transfer to  plate.

Reduce  heat to medium. Add remaining 1 tablespoon of oil to  skillet along with mushrooms. Sauté until browned, just tender,  5 minutes. Stir in  sun-dried tomatoes, rosemary, garlic, 1/2 teaspoon of salt,  a few grinds of black pepper. Sauté for 1 minute more. Stir in  white beans.

Nestle  chicken breasts in  mushroom mixture, cover. Bake 30 – 40 minutes. Serve in shallow bowls, spooning plenty of t broth over chicken and vegetables.
