Ingredients to Gather
3 ripe white peaches, pitted and cubed
6 tablespoons sugar
1 tablespoon juice from 1 lemon
9 (3-inch) sprigs rosemary, plus more for garnish if desired
3 cups dry white wine
6 ounces London dry gin
Directions to Follow
Start by combining the peaches, sugar, and lemon juice in a large pitcher and then stirring to combine them. Add the rosemary sprigs and then everything sit for 30 minutes at room temperature to allow the peaches to release some of their juices. After this, add the wine and gin, stirring to combine, and then cover and place in the refrigerator for anywhere from 2 hrs. to overnight and then serve with an optional fresh sprig of rosemary.
