This Is Our New Summertime Favorite!
Around here, we're huge fans of zucchini. In fact, we're always on the lookout for recipes that use it, and we're always coming up with ways to add it to our favorite dishes. Plus, if you've ever grown zucchini, you likely know that you usually end up with way more than you expect and you have to really scramble to use it all up before it goes bad. This zucchini-basil soup is the perfect way to deal with that, because it transforms zucchini into a savory, zesty soup that's ideal for lunch or dinner!
In fact, we like to make a nice big batch and then freeze it, so we always have a quick and easy meal on hand for when we don't have a lot of time off don't feel like spending hours in the kitchen cooking. We really like how the zucchini and basil in this soup complement each other, and there's also plenty of flavors thanks to the leek, celery, and garlic, along with some pepper for an extra little kick. Delicious!
