Try These Easy Oven-Baked Chicken Teriyaki Meatballs!

Here is a new way to try some chicken! Not only is it great tasting, but it's good for you! You can't go wrong with this idea at all!

The Ingredients To Gather: 

  • 1 pound ground chicken (again, I recommend the at-home version)
  • 1/2 cup panko bread crumbs (regular plain breadcrumbs would work well too)
  • 1/4 cup teriyaki sauce plus more for dipping
  • 1 carrot, shredded
  • 1/2 red onion, shredded
  • 1 clove garlic, minced
  • 1 egg
  • salt and pepper to taste
  • 1 pineapple, cored and cut into 1-inch cubes
  • 1 red onion, cut into 1-inch cubes
  • other optional veggies: peppers, zucchini, squash

The Step By Step Directions To Follow: 

In a med to large mixing bowl, mix together the chicken, bread crumbs, teriyaki sauce, onion, carrot, egg, salt, and garlic and pepper.

Form the mini meatballs using 1 tbsp. scoops into balls and place on a baking sheet when they are done.

Put in the fridge while you are turning on the grill to a medium heat and assemble the rest of the ingredients for the skewers.

Thread the skewers with the red onion, pineapple and any other veggie you have and 1 meatball then repeat the process.

Either brush the grill with olive oil or spray with non stick spray then place skewers on the grill gently.

Grill for about 5 minutes on each side or until the center of the meatballs are done.

Finished!

To complete the meal, add some brown rice on the side with an extra side of sauce. Now your ready to eat this great tasting healthy meal. SHHH no one will ever know how easy it was to put together!
