Unlike Anything Else You’ve Had Before, This Chipotle Pulled Pork Is A Real Winner!

When it's rainy outside, this is the perfect go-to meal to make to warm not only the house, but the whole family. These ribs come out super tender and can be shredded for some juicy pork tacos.

Let's Get Started… 

Things You Will Need:

  • 2 pounds boneless country pork ribs, cut into 2-inch pieces

  • 1 teaspoon chipotle chili powder

  • 1 teaspoon dried oregano

  • 1 teaspoon ground cumin

  • 1 teaspoon salt

  • 1 onion, chopped

  • 4 cloves garlic, sliced

  • 1 1/4 pounds sweet potatoes, peeled and cut into 1-inch pieces

  • 1 green pepper, cored, seeded and thinly sliced

  • 2 cups reduced-sodium chicken broth

  • cornbread

  • 1/2 cup cornmeal

  • 1/2 cup all-purpose flour

  • 2 teaspoons sugar

  • 1 teaspoon baking powder

  • 1/8 teaspoon salt

  • 2 tablespoons cold butter, cut into small pieces

  • 1/2 cup milk

  • 2 tablespoons chopped cilantro

How To Prepare:

  1. Start out by giving your crock pot some nonstick spray on your crock pot. Then season your meat with the necessary spices included in the ingredient list. Place your meat in the crock pot then cover with veggies, and then broth. Set timer to cook on low for six hours.
  2. While your meat and veggies are cooking, it's time to prepare your cornbread batter. Mix together in a large bowl, cornmeal, flour, sugar, baking powder, and salt. Then add your butter. Then your milk. Then fold in cilantro.
  3. About an hour before your meat is about ready, go ahead and drop the cornbread batter in heaping tablespoons on top of your meat and veggie mixture.

Note: The best part about cooking the whole meal in one pot is that you only have one pot to clean when you're done. Instead of using the nonstick spray you can also use one of those plastic bags that line the crock pot for easy cleanup. You can find them at your local grocery store.
