Vegan Strawberry Shortcake with Macadamia Crème

Spring has returned and strawberries are in season! While I do love loading up on fresh strawberries in my smoothies and oatmeal, it’s nice to be able to indulge also. This is an excellent recipe for strawberry shortcake and to top it all off I have a delicious macadamia crème that will rock your world. This recipe is Vegan, quick to make and perfect for an afternoon tea, outdoor potluck, or evening dessert. The instructions here will make 8-10 shortcakes, so I recommend doubling the recipe if you have more appetites to feed.

As for the macadamia crème, I am sure you will find your new favorite substitute for whipped cream and a healthier version at that! On a semi-unrelated note, if you have not yet tried macadamia nut butter, you might want to see what you have been missing out on.  Macadamia nuts are a Vegan’s best friend. They are so deeply rich and satisfying and an excellent source of protein and healthy fats. They are also high in antioxidants and fiber.
