Once You Try This Version Of Mac And Cheese You Will Want To Make It Over And Over Again. The Mexican Chorizo Adds A Delicious And Spicy Twist.

Ingredients To Gather:

  • 2 cups elbow macaroni

  • 1 cup milk

  • 1 teaspoon corn starch

  • 4 ounces shredded cheddar cheese (about 1 cup)

  • 4 ounces shredded pepper jack cheese (about 1 cup)

  • 6 ounces Mexican chorizo

  • 1/2 cup minced red onion

  • 2 Tbsp flour

  • 2 teaspoons lime juice

  • 2 Tbsp breadcrumbs

  • 1 Tbsp butter

Directions To Follow:

  1. In a bowl, mix corn starch and cheeses in a bowl. Set aside.
  2. Put milk into a small saucepan. Heat until steamy. Keep warm while you are preparing the rest. Do not let boil.
    Put 2 quarts of water, salted with 1 Tbsp salt, into a large pot. Heat to a boil. Once at a full boil, add macaroni. Return to a boil. Cook, uncovered, for about 2 minutes less than the macaroni package specifies. Macaroni will be al dente: Cooked, but still firm to the bite.
  3. Prepare the chorizo cheese sauce. Remove chorizo from its casing and put into a medium thick-bottomed saucepan on medium high heat. Wait until it begins to sizzle. Reduce heat to medium. Cook chorizo, stirring often, for 2 minutes. Add minced red onion. Cook mixture until onions soften, about 3-4 minutes.
  4. Drain macaroni. Set aside. Preheat oven to 375°.
  5. Add flour to the pot with the chorizo. Mix well. Everything will clump up. Reduce heat to medium-low. Cook for 2 minutes, stirring and scraping the bottom of the pot constantly. Add hot milk, a tablespoon at a time, stirring constantly.
  6. After all the milk has been added, heat mixture to a gentle simmer. Cook for 2 minutes.
  7. Mix cheese into the chorizo milk sauce. Mix in the cooked macaroni. Stir in the lime juice. Place macaroni and cheese into a small casserole dish. Add breadcrumbs to the top. Dot with the butter. Bake until breadcrumbs are golden, about 20 to 25 minutes.

This easy to make dish is a guaranteed crowd-pleaser. Perfect for a midweek family dinner, as part of a weekend brunch, or for a pot luck. The spiciness of the chorizo combines wonderfully with the mac and cheese. If you don't have lime juice, lemon juice works well, too.
