We Added Some Southern Flair To Our Mac N Cheese & It Made It Even Better!

Here's everything for this savory, spicy Cajun mac and cheese. This easy recipe requires 40 minutes total time and makes four servings.

Ingredients To Gather:

1 lb. cavatappi or other short-cut pasta
1 tbsp. extra-virgin olive oil
2 bell peppers, diced
1/2 white onion, diced
kosher salt
Freshly ground black pepper
2 garlic cloves, minced
1 lb. andouille sausage, sliced
1/2 lb. peeled and deveined medium shrimp, tails removed
1/4 c. Sliced green onions
1 tbsp. Cajun seasoning
2 tbsp. butter
2 tbsp. all-purpose flour
2 c. milk
1 1/4 c. shredded Cheddar
1 1/4 c. Shredded Monterey Jack
1/4 c. panko bread crumbs
2 tbsp. melted butter

Directions To Follow:

Start by cooking the pasta until it's al dente, in a large pot of salted boiling water, and then drain the pasta and put it back in the pot. While the pasta is cooking, heat oil over medium heat in a large, oven-safe skillet. Add the bell peppers and onion, season with salt and pepper, and then cook for about 5 minutes or until soft. Add the garlic and stir in, and then add the andouille sausage, shrimp, 2 tablespoons green onions, 1 tsp. Cajun seasoning. Cook until the shrimp is pink, which typically takes about 2 minutes per side. When it's done, transfer the mixture to a plate.

Next, make the cheese sauce. To do this, melt the butter in a skillet and then add the flour and whisk until the mixture is a golden color, and then add the milk and simmer for about 2 minutes or until thickened. After this, add the rest of the Cajun seasoning and 1 cup each of both the Cheddar and the Monterey Jack cheeses and stir until the mixture has melted and is well combined. Next, combine the bread crumbs, melted butter, remaining green onions, and a pinch of salt in a small bowl, and then top the mac and cheese with the bread crumbs and bake for about 15 minutes or until the bread crumbs have turned a golden color and the cheese has melted.

This is an incredibly amazing mac and cheese recipe. We never would have thought to try a Cajun version, but now that we have, this may be our new favorite comfort food.
