- Combine flour, pistachios, sugar, baking powder, soda, salt. Whisk until combined. In smaller bowl, whisk eggs, milk, vanilla extract, butter. Add wet ingredients to the dry, mixing until smooth, combined.
- Heat skillet or electric griddle over medium heat. Add a bit of butter if desired, pour 1/4 cup of batter on skillet, repeat, leaving an inch between pancakes. Cook until tpancakes bubble on the top and edges, 2 minutes. Flip, cook for another minute or two until golden. Top pancakes with pistachio butter , syrup.
- Whisk butter, pistachios until combined. You can use it just like this or place it in the fridge to harden a bit.
- Heat butter over medium heat in saucepan, whisking constantly.
- Cook until it bubbles and the brown bits appear on the bottom 4 – 5 minutes, then quickly stir in vanilla bean paste, remove it from the heat. While warm, stir into the maple syrup.
