Our wild-card opinion belongs to Kelli. In the service of better texture, the microwave is the best option for quickly removing water and changing the physical structure of eggplant so it absorbs less oil.

Salting keeps the eggplant from turning into a mushy blob once cooked. I heavily salt eggplant and let the salt draw out the oil from the eggplant for at least 30min. Then you rinse the salt and oil off and pat dry with paper towels. Now when you cook the eggplant it’ll be more solid and less gooey.
