Ingredients To Gather:

  • 2 tbsp. Chopped cilantro
  • Juice of 3 limes
  • 1 tsp. honey
  • 1/4 c. plus 1 tablespoon extra-virgin olive oil
  • 1 lb. large raw shrimp, peeled and deveined
  • 1 large head of romaine, cored and chopped
  • 1 c. cherry tomatoes, halved
  • 1 c. corn kernels (fresh or frozen and thawed)

Directions To Follow:

  1. Start by combining the cilantro, lime juice, honey, and olive oil in a small bowl, and then adding salt and pepper.
  2. Next, combine the shrimp and half of the dressing in a glass baking dish and let it marinate for between 10 minutes and 1 hour.
  3. Next, heat 1 tbsp. of olive oil in a large skillet over medium-high heat, and then add the shrimp and sear for 2 minutes on each side or until completely pink.
  4. Next, put everything in a large bowl and add the romaine, tomatoes, corn, and shrimp.
  5. Toss with the rest of the dressing to make sure the salad is completely coated.
