I'm obsessed with taco Tuesday, but aren't we all? I can rest easy on Tuesdays because I know dinner is covered … well at least I know what we are having. On most nights that means $1 tacos at the local taqueria, but sometimes I bring the fiesta to the casa. I rallied a bunch of friends to come over to my place after work for some tacos and margs. I then had to think of what types of tacos to make, but before I could fuss over this whole idea turning into more hassle than it needed to be, I quickly decided that beef fajitas would do the trick. And they were a smashing success.

In fact, this recipe tastes so good that I've even made it on a Wednesday. i.e. they were so amazing on Tuesday that we simply had to make them the following night as well.
