Who Likes Flavorless Chili? Take This Classic Recipe Up A Few Notches & Make Our Spicy Fajita Chicken Version

Ingredients To Gather:

  • 1 tablespoon canola oil
  • 2 1/2 pounds boneless, skinless chicken breasts, thinly sliced diagonally
  • 2 large onions, cut into 1/4-inch slices
  • 2 large sweet red peppers, seeded and cut into 1/4-inch-thick slices
  • 1 can (15 1/2 oz) pink beans, drained and rinsed
  • 2 cans (14 1/2 oz each) diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • Shredded cheddar, sour cream, guacamole and flour tortillas (optional)

Directions To Follow:

Start by coating the inside of your slow cooker with nonstick cooking spray, and then heating oil over medium-high heat in a large nonstick skillet. Add the chicken to the skillet and cook until it's lightly browned, usually for about 6 minutes. You may need to cook the chicken in two batches. In the slow cooker, arrange the onions, peppers, cooked chicken and beans in layers, and them mix together the tomatoes, chili powder, cumin, oregano and salt and pour this over the beans in the slow cooker. Cover the entire mixture and cook on high heat for 3 hours or low heat for 6 hours.

Sounds easy, doesn't it? Now all you need to do is serve with your favorite toppings and extras. We recommend sour cream, guacamole and shredded cheddar cheese. You might also want to serve with flour tortillas.
