The celebrations of St. Patrick's Day are behind us, but that doesn't mean we don't have corned beef in the fridge AND the freezer. If you're anything like me, then you probably took advantage of all of the sales that went on at the grocery stores after the holiday. Meaning, you bought A LOT of corned beef. Your crock pot needs a break, so it's time to whip out the pressure cooker.

I love having plenty of slow cooked corned beef handy in the fridge when I'm trying to get creative with what to eat next. I cook it up and have it on stand by, especially after the holiday. So far, with this recipe I've made corned beef omelettes with a dash of 1000 island, corned beef and cabbage (duh), corned beef Reuben sandwiches and corned beef hash. The options are endless with this tender salty meat.
