Why Go For A Boring, Flavorless Side Dish When It’s Easier To Make These Roasted Rosemary Dijon Potatoes Instead?

These amazing potatoes make enough for about six servings but if you want plenty left over, you can always double the ingredients. They take about ten minutes to prepare and about twenty to twenty-five minutes in the oven.

Let's Get Started…

The Ingredients To Gather: 

  • 3 pounds of red potatoes
  • 1 – 2 TBS extra virgin olive oil
  • 1  TBS  Dijon mustard
  • 1 TBS  rosemary
  • salt and pepper, to taste

The Step By Step Directions To Follow:

  1. Preheat oven to 450 degrees F. Spray large sheet pan with cooking spray.
    Toss diced potatoes with oil, mustard, rosemary and salt and pepper.
  2. Pour out onto baking sheet and arrange in single layer, with some space between potatoes.
  3. Roast for 20 – 25 minutes, mixing about halfway through cook time.
  4. Potatoes are done when they are fork tender and golden brown.
