Why Wait In Line At Starbucks When You Can Make This Carrot Cake At Home?

Once you read these ingredients, you'll see why this carrot cake is so tantalizing. Plus, you likely already have many of these ingredients in your pantry already, meaning you don't have to make a special trip to the grocery store to create this masterpiece.

Ingredients To Gather:

  • 3 eggs
  • 1/2 cup unrefined cane sugar
  • 2/3 cup light brown sugar
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 cup sunflower oil
  • 2 3/4 cups grated carrots
  • 1/2 cup hazelnuts
  • 1/2 cup golden raisins
  • ½ teaspoon cinnamon
  • ½ teaspoon ginger
  • 1 pinch of salt
  • For the frosting : 1/2 stick softened butter, 1 cup cream cheese & 1/3 cup powdered sugar

Directions To Follow:

To make this cake, start by chopping the hazelnuts and breaking the egg into a bowl. Then, combine the cane sugar and brown sugar and stir. Next, add the sunflower oil, flour, baking powder, spices and salt, and stir it all together. Next, add the carrots, raisins, and 3/4 of the hazelnuts. Then you're ready to bake:

Pour the mixture into a greased loaf pan. Smooth the surface, and bake in a preheated oven at 330 °F for about 40 minutes. Insert the tip of a knife into the cake—it should come out clean. Wait 5 minutes before removing the cake from the loaf pan and setting it on a wire rack to cool.

For the finishing touches, combine the butter, cream cheese and powdered sugar to make the frosting. Once the cake cools, spread the frosting on top, garnish with the leftover hazelnuts, and you're done!

We like how simple this recipe is. You don't have to be a pastry chef to create bakery-quality confections at home. In fact, you'll enjoy cooking this cake so much you may just turn into a baking fiend! With a recipe this simple, there's simply no excuse not to make the most of your kitchen and prepare a treat that everyone will love!
