Wild Salmon Cakes with Arugula Avocado Salad

The word cake makes me think of my kid’s favorite dessert, flour and sugar covered in frosting, a guilty pleasure I’ve vowed to steer clear of. Now the word salmon is different. It conjures visions of Omega-3 fatty acids and Vitamins A, B, D and E. It’s a wonderful, healthy option that I try and incorporate into our weekly meals.

Unfortunately my children, and frankly my husband, don’t feel the same way about this delicious fish. I even tried re-branding. When asked, What’s for dinner? I said with excitement, Pink Fish! Still they only poked it with their forks.

Then I saw this recipe for Salmon Cakes with Avocado Arugula Salad and I realized the answer, salmon and cake together. When I served this to my family it was pure magic. Presto, three plates licked completely clean!

This dish is perfect because they get their daily dose of vegetables and protein all in one dish. If your a busy parent with a lot of things on your plate (other than food) then this is definitely something you want to serve up.

The preparation is easy and this dish only takes thirty minutes from start to finish!
