You Have To Try This Zucchini Bread ~ I Think We’ve Found A New Breakfast Favorite

While the thought of a zucchini or carrot bread might confuse the unacquainted, those of us who were once skeptics can now tell you what a great slice of zucchini bread can taste like … and this recipe is superb!

It make two luscious loafs and is not to be missed!

Ingredients To Gather: 

•3 eggs
•2 cups granulated sugar
•1 cup vegetable oil
•2 cups grated, peeled raw zucchini
•3 teaspoons vanilla extract
•3 cups all-purpose flour
•1 teaspoon salt
•1 teaspoon baking soda
•1/4 teaspoon double-acting baking powder
•3 teaspoons ground cinnamon
•1 cup coarsely chopped walnuts

For preparation instructions we urge you to go to Epicurious. It will tell in what order to whip your eggs, add your sugar and oil and what size pan(s) to use for your delicious zucchini bread!

However, we will tell you here that, once baked, it does need a good cool on a rack – for about an hour. Everyone will love it and you don’t have to tell anyone how easy it was!
