Brown sugar,onion red wine ,salt and pepper ground oregano ,and itialian,seasoning whether I make my sause from scratch,or from a can I still put the ingredients in and ofcourse lots of garlic ,it’s wonderful ,you can cook it all day let the flavors marry ,itsts great ,you can also use it for home made pizza sauce

Is the secret ingredient the rosemary?
I made a pot yesterday using my own canned tomatoes and sauce and my own recipe. Took a taste and found the sauce to be quite bitter so I added some baking soda (about 1 tsp–it was a big pot of sauce) and it foamed up like crazy. It was the foamiest I have ever seen a pot of sauce get. Once the acid was neutralized it tasted wonderful, bringing out the natural sweetness of the tomatoes without having to add a speck of sugar.
I don’t ever add oregano to my gravy/sauce as it makes it very bitter. This was once passed onto my dad who used to work in an Italian restaurant.

There was NO secret Ingredient in this recipe! In fact, just a hint to everyone – Chefs if they use canned tomatoes will add a little bit of sugar or sweetener of some kind. Canned tomatoes will taste tinny. Chop or process everything super fine.

I put a can of tomato sauce in the blender and add my carrots, celery and onion. Puree and finish the sauce.
My mom’s parents were born on Czechoslovakia and my dad in Budapest. With this background we cook everything with garlic and onions. Soooo, this is no surprise to me. In fact everyone I know puts garlic in everything. We also never add sugar to any sugar in tomatoes dishes. My mom used to can tomatoes and we always used that. That was the best sauce ever!
I add some baking-soda not to much start out small it takes the acidity out of the sauce works great no heard burn!!

Yep Red Wine and a Little Sugar… this Italian has been making sauce with these “secret ingredients” for over 50 yrs 🙂 YUMMY !
