These Cheesy Jalapeno Chicken Burritos Are So Simple

These cheesy jalapeño chicken burritos are just what you need for your next meal. This recipe offers juicy, tender delicious chicken, peppers and onions, cream cheese and more, for the perfect balance of heat and flavor. They are super easy to make and something the whole family will love.

Things You Will Need:

  • 4 Boneless, skinless chicken breasts

  • 1 Onion, diced

  • 1 Green Pepper, diced

  • 1 ½ Cup Chicken Broth

  • Salt & Pepper

  • 1 package (2 Cups) Shredded Cheddar-Jack Cheese

  • 4 Ounce Sliced Jalapenos, drained

  • 1 Cup Whole Milk

  • 2 Package Cream Cheese, softened

  • 16 Ounce Sour Cream

  • 1 Teaspoon Minced Garlic

How To Prepare:

  1. Cook chicken in crock pot with salt and pepper, peppers and onions.
  2. Cover with chicken broth and cook on low for about 4 hours until the chicken is pull apart ready.
  3. Remove chicken from the crock pot and shred. Remove some of the juices so that there is only just enough remaining to keep the chicken moist.
  4. Put the chicken back in the crock pot and continue cooking, letting all those amazing flavors blend together.
  5. Now it's time to make the sauce! Pull out your handy dandy food processor to quickly and easily prepare the sauce. Combine cream cheese, sour cream, milk, 1 cup of Cheddar-Jack, garlic, jalapenos and salt & pepper and blend away.
  6. Combine half of the sauce with the chicken in the crock pot and continue cooking.
  7. Heat the other half of the sauce to pour over assembled burritos. You can do so on the stove in a pot, or use a mini crock pot with a warm setting.
  8. Now it's time to roll your burritos! Warm the tortillas how you like. Some people microwave, or warm over an open flame on the stove top. It's up to you!
  9. Fill warm tortillas with chicken mixture and roll into a burrito.
  10. Top with sauce and cheese.
  11. Enjoy!

These wet burritos are amazing! Serve with your favorite hot sauce, sour cream, or sliced avocado. Fork and knife are required to enjoy these bad boys, but tortillas chips are another great tool to use. With every bite you'll think to yourself that slow cooking chicken is the only way to go from now on.
