You’ll Never Guess That This Smokey, Tender & Juicy Barbecued Beef Brisket Was Cooked In The Oven

Once the brisket is cooked, remove the bacon and chop it finely to use in the barbecue sauce for added flavor. This recipe serves eight, but you can double it and have it for a party or save the leftovers for the next day. The brisket is delicious as filling for sandwiches.

Ingredients To Gather:

What You Need For The Rub

  • 1½ tablespoons packed light brown sugar
  • 1½ tablespoons paprika
  • 2 teaspoons dry mustard
  • 2 teaspoons ground black pepper
  • 2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ¼ teaspoon cayenne pepper

What You Need For The Brisket

  • 1 brisket roast (4 to 5 pounds) – if there is a thick layer of fat, trim it down to ¼ inch
  • 1 pound bacon

What You Need For The Sauce

  • reserved bacon from cooked brisket
  • 1 onion, finely chopped
  • ½ cup cider vinegar
  • ⅓ cup packed dark brown sugar
  • 1-2 cups chicken broth
  • ½ cup ketchup
  • 4 teaspoons canned chipotle peppers in adobo sauce, minced

The Step By Step Directions:

  1. Mix all ingredients for the rub in a bowl and set aside.
  2. Heat oven to 275 degrees. Place rack in upper-middle position. Rub dry rub over brisket and poke holes with a fork. Place half of the bacon crosswise in a broiler safe 9 by 13-inch pan.
  3. Put brisket fat side down on top of bacon. Place rest of the bacon crosswise on top of brisket, wrapping it down around the sides, and tucking any excess under the brisket. Cover pan with foil. Bake for 4 hours.
  4. Take pan out of oven and flip brisket over, fat side up. Replace foil. Return to oven. Turn off heat. Leave brisket in oven for sixty minutes.
  5. Pour juices from brisket into a measuring cup or a bowl. Remove bacon from brisket. Chop into fine pieces. Cook bacon in saucepan over medium heat for about 5 minutes or until fat has rendered. Add chopped onion. Cook until softened, 4-5 minutes. Take saucepan off heat. Add vinegar and dark brown sugar. Return to heat. Simmer until reduced to a syrupy consistency, about 5 minutes.
  6. Skim fat from juices. Add chicken broth to make a total of 3 cups juice. Add liquid to mixture in saucepan. Reduce until about 3 cups in volume,  about 8-10 minutes. Take saucepan off heat. Add ketchup. Mix well and strain if desired. Add chipotle peppers.
  7. Turn oven to broil. Brush brisket with 1 cup sauce. Broil until the top is lightly browned and the fat starts to crisp. Cut brisket against the grain into ¼-inch slices. Serve with sauce.
