Comfort food is one of the best things ever invented. It may be that growing up in the South fashioned in me a love for all things comfort food or it may be that I simply love to indulge. Either way, this next dish is one that I wish I had discovered sooner.

I have read recipe after recipe and tried burger after burger but this one was totally new to me. Not only have I never eaten this dish but I honestly have never heard of it before now. The dish I am referring to is the Bacon Cheeseburger Muffin!

While muffins are normally associated with breakfast this one wins over the lunch and dinner crowd with every delicious bite. While burgers themselves are pretty easy to prepare this may actually be simpler! There are no burger patties to shape and clean up is a cinch! Here is what you will need in order to create this create yet delicious dish.

Ingredients:

• 1 tablespoon butter, melted
• 1 tube Pillsbury biscuit dough
• 3 slices thick-cut bacon, chopped
• 1 lb ground beef
• 1/2 cup diced yellow onion
• 1/2 teaspoon seasoned salt
• 4 tablespoons ketchup
• 6 slices cheese (your choice), each cut in four pieces

I think the only thing I did not have on hand was the dough. Obviously, if you are a seasoned chef you can always kick it up a notch and make the entire thing from scratch. This would amp up the flavor and I have had friends even purchase meat and do the grinding themselves at home. This recipe, however, is meant for those with little time and little patience for the long process.
