This is probably the dish she is most known for. A true French classic, dark pieces of chicken marinated overnight and braised with bacon in a mixture of cognac red wine, onions and mushrooms. This rich meal is not one you decide to make on a whim, this one takes some planning but the end result, tender flavorful chicken smothered in a rich sauce is so, so worth it!

Chicken Breasts with Mushrooms and Cream

I know a lot of people that rely on a certain can of mushroom soup to bring some creaminess to the dinner table but I am not one of them. I love a solid recipe that combines fresh ingredients to make something most people would rather buy in the can. This recipe takes butter, shallots and whipping cream to create that same peppery mushroom sauce only better!

Eggplant and Zucchini Gratin

This is definitely the lightest on the list! This colorful side dish of eggplant and zucchini is baked with breadcrumbs and Parmesan cheese, an easy and delicious, side dish. I am not a fan of fennel or anything close to the flavor of black licorice, so I left it off but there was still plenty of flavor left in this healthy dish.

Potatoes au Gratin Dauphinois

This decadent side dish is a crazy mixture of Gruyere cheese or your favorite Swiss with heavy cream and the flavor or garlic and the starch of potatoes. With this dish, I never ever have leftovers. I make sure to eat healthy all week when I know I am serving this so I don’t feel bad about my extra large serving!

Classic Cheese Souffle

I am not going to sugar coat it, this recipe isn’t easy, but if someone like me, who is challenged when it comes to baking, can pull it off so can you! Nothing says French cooking or Julia Child more than a fluffy puff of cheese. Yes there are more steps than ingredients in this recipe but just think of how impressed whoever you are cooking for will be when you say a soufflé is on the menu!

This is just the tip of the iceberg when it comes to Julia Child’s legacy. You can find all of recipes in her books, which are still all in print or watch her old PBS shows on the Internet. Though I don’t plan on cooking my way through her entire repertoire I do enjoy re-visiting her recipe selection from time to time!
