    good to know,, I have always wondered why sometimes if i just use whipping cream, it doesn’t hold it’s peaks,, now i know,, you sure can tell the difference the next day,,,

    “There are differences in milk-fat content. All cream contains at least 18 percent milk fat: “whipping cream” is made up of 30 percent. “heavy cream” contains 36 percent or more.”

    “There are differences in milk-fat content. Whipping cream, heavy cream, heavy whipping cream all work for recipes that incorporate whisked air. Don’t reach for that half-and-half; at 10.5 to 18 percent milk fat, it won’t cut it.”

    I owned a paint store. One morning I wanted some whipping cream for a treat we were having. Could’nt find any on my way to work at 6:30. Got some milk at the bakery (Steve’s). Put milk and sugar in a quart and threw it on the paint shaker. Left it on too long and it went directly to BUTTER! It was good.

    I always use “heavy whipping cream” for any recipe that calls for cream because its the only variety my local store sells. I’ve never had a problem with any recipe turning out wonky because of the type of cream I used, regardless of if it was a dessert or something like soup or a sauce for steak.
