This Tomato & Cauliflower Casserole Is So Good You Won’t Even Know It’s Healthy!

The Ingredients To Gather: 

  • 1 lb cauliflower floret
  • 4 tomatoes, peeled, seeded and chopped
  • 1⁄2 teaspoon salt (or to taste)
  • 1⁄4 teaspoon pepper
  • 2 tablespoons parmesan cheese, grated
  • 1⁄4 cup swiss cheese, shredded
  • 1⁄4 cup dry breadcrumbs
  • 2 teaspoons unsalted butter, melted

There are a few ways you can make this dish. The way I prefer to do it is to…

  • Preheat the oven to 350 degrees.
  • Toss everything in the casserole dish, of course, chop everything up first.
  • Cook for 25-30 minutes.

  • There are people who like to boil the cauliflower and arrange it with the tomatoes but that is up to you.
  • Not sure it will be filling enough? Grill up some cubed steak or sausage and throw it in there for some added flavor!
  • Either way – However you make this casserole it is sure to come out incredibly delicious.

    Me, too. I don’t like to make vegetables “unhealthy”, but this really looks good! And there’s a lot of different ways to make it different. Carrots, broccoli, onion, are just a few vegetables that can be added to change it.
