Crock Pot Chicken Cacciatore – This Recipe Is Simple To Make & Always Comes Out Delicious!

This amazing slow cooker  Chicken Cacciatore makes about six servings but to make more to enjoy for another easy meal, just double the ingredients. It takes twenty minutes to prepare and about three hours in the slow cooker on high or six to eight hours on low.

The Ingredients To Gather:

  • 3 pounds chicken thighs and/or legs
  • 1 teaspoon olive oil
  • 1 cup  onion
  • 1  green pepper
  • 8 ounces brown crimini or portobello mushrooms,
  • 4 cloves garlic
  • 1 14-oz can tomatoes
  • 2/3 cup dry wine
  • 1 tablespoon Italian seasoning mixture, or 1 teaspoon each oregano, basil, thyme,
  • salt, pepper
  • 1/3 cup tomato paste
  • 1 inch of Parmesan cheese rind (optional)

The Step By Step Directions To Follow:

1. Season chicken with salt,  pepper. Put in crock pot set to high, cover.

2. Heat olive oil over high heat.  Cook  onion,  green pepper  2 – 3 minutes,  add  mushrooms. Two minutes later, add  garlic. Cook  another minute.
3. Add  tomatoes, wine, herbs, salt, pepper. Simmer  5 – 10 minutes, until liquid is almost completely boiled away.

4. Add  tomato paste, Parmesan cheese, stir.  Spoon ingredients onto  top of  chicken, cook 3 hours on high,  6 – 8 hours on low.

An Additional Note: 

When it only has about thirty minutes left, make sure the seasonings are to your liking and add more if desired.
