If you don't have enough water, the egg may drop to the base of the pan and separate; ample water allows the egg to remain suspended and set up as it cooks.
Make Sure That You Are Using Plenty Of Water & Also That The Water Is To A Raid Boil Before You Drop Your Egg In.

I’m an Eggs-pert at cooking eggs.
My dad use to preach that you cook your eggs like you drive a car. Control your speed/heat and you will get to where you want to go.
So that’s what I was doing wrong.
