I absolutely love tamales. I love going to the farmer's market on the weekends with my family and ordering one of these while we are there. There is usually a tamale lady with a giant army size pot loaded to the brim of all different types of tamales. I usually pick the beef because they always seem to have the perfect balance of moisture and flavors all packed into one little pocket.

This classic Mexican dish is not one that you can whip together or tackle half-heartedly, but we promise, if you put in the time and effort, you will be rewarded with some of the best tamales you've ever tasted!

With an abundantly rich background in tamale tasting, I was uber curious to try and make them at home all by myself. Because lets face it, even though the above mentioned tamales are mind glowingly tasty, they still could have had some minor tweaks to perfect them to what I look for in a tamale. Usually the only thing I would change is more filling! By making them at home you can stuff them as much as your tamale dough will hold.
