Mashed Potatoes Are Boring: These Onion, Cheddar & Bacon Potato Cakes Are Where It’s At!

This just may be the best use for Mashed Potatoes we have ever seen! What a great idea; you can serve these up for breakfast or have them as a snack!

Don't be afraid to use that left over gravy on top.

With Thanksgiving coming up soon, this might be a good reason to keep some mashed potatoes over for yourself.

Ingredients To Gather Up Before You Start: 

  • 2 tbsp olive oil
  • 1 small red onion, finely diced
  • 3 cloves minced garlic
  • 4 cups cold mashed potatoes
  • 1 beaten egg
  • 4 rounded tablespoons flour
  • ¼ cup chopped green onion
  • 2 tbsp chopped parsley
  • ½ tsp black pepper
  • 6 slices cooked, thick cut bacon, chopped
  • 1 cup diced cheddar cheese
