    potato pancakes are made from grated raw potatoes…not mashed…we’ve always made these, just didnt add cheese..will try it now

    I have made these for years except with Parmesan cheese and no bacon. I now oven fry them. They turn out great without all the oil. You just brush with a little butter on the side up, turn once during baking and lightly brush that side as well. The light brushing of butter gives it that nice brown crispness.

    We call these potato pancakes. I sometimes intentionally make enough mashed potatoes to have leftovers to cook them the next day. It seems to work better starting with cold potatoes.
