These Stuffed & Smothered Enchiladas Are What Good Mexican Food Actually Tastes Like!

Enchiladas That Taste So Good I Can't Believe I Settled For So Long!

I love enchiladas. Who doesn't? They require just enough technique to where the love shines through on a completed dish. The whole assembly step can get pretty intense, depending on how many ingredients you have to stuff inside, and how many people you are feeding. My family takes at least two casserole dishes filled to satisfy our craving, and keep in mind there are only four of us. We absolutely love it when we have leftovers of our favorite meal. It rarely happens, but I always go in trying to attempt that result.

These bean and cheese enchiladas are no exception. The whole family is obsessed with them and can't help themselves going back for seconds. You'd think that enchiladas with just plain beans and cheese isn't the most exciting option for enchiladas, but you'd be surprised.

    Look up guajillo enchilada sauce by Rick Bayless. That’s the one I use. But ….. It works with New Mexico dried chiles as well. Don’t bother with all of the toasting. Just soak chiles as directed.
