My mother is the worlds biggest chocolate fanatic! I am sure many people say that and it's probably true in many many cases. Chocolate is one of those ingredients that is super versatile and great when paired with everything from the spicy to sweet.
With her birthday coming up she wanted a cheesecake but wasn't sure about which kind. So knowing that she was obsessed with chocolate as she is I decided to go with the chocolate ripple cheesecake. Thankfully I went with my instinct and made this because it was the hit of the party. Here is what you will need for this dish.
Ingredients:
- 24 chocolate sandwich cookie
- 4 tablespoons unsalted butter, melted
- 8 oz cream cheese, 4 packages
- ¾ cup sugar
- 1 teaspoon vanilla extract
- 4 cups heavy cream
- 1 ½ tablespoons gelatin powder
- 2 cups semisweet chocolate, melted, divided
