A Blast From The Past with This Doritos Taco Salad

A Blast From The Past with This Doritos Taco Salad

Taco salad is a wonderful thing. It's up there with tortilla soup. And with the addition on Doritos in your taco salad, you can feel like you've really lived your life to the fullest at this point.

What You Will Need:

  • 1 lb 95% lean ground beef
  • 1 (1.25 oz) packet reduced sodium taco seasoning
  • 1 medium-large head of iceberg lettuce, chopped into bite sized pieces
  • 1 medium-large tomato, diced
  • 4 oz 50% less fat or 2% sharp cheddar cheese, shredded (such as Cabot)
  • 4 oz nacho cheese Doritos, broken up a bit into bite sized pieces
  • 1 cup light Catalina or French dressing (I used Kraft Lite Catalina)

How To Prepare:

  1. Brown the ground beef in a skillet over medium heat, breaking it up into pieces with a wooden spoon. Add the packet of taco seasoning and stir until well coated. Set aside.
  2. In a large serving bowl, combine the lettuce, tomatoes, cheese and ground beef. When ready to serve, add the Doritos and dressing and toss to coat.

Note: As if this Doritos taco salad couldn't get any better, this recipe caters to people who like to eat salad for health reasons. i.e. the delicious comforting ingredients don't have to ruin the health factors and benefits you get from picking the salad over the tacos.

I make mine a little different. I cook a lb. of hamburger, cut up a head of lettuce and put in a serving bowl. Then I add cheddar cheese, a can of rinsed kidney beans and a bottle of Creamy Italian dressing. Then mix all together. My son loves it!
