When many of us throw out food because it has reached or is passed the date on the package, we feel like we wasted money. We might even think about all those things we wanted to make with that food.
The Answer To Whether Or Not Eggs Are Safe After The Expiration Date Is:
Yes, eggs should be fine, provided you’ve been storing them properly.
As the Washington-based Egg Safety Center notes, dates you see on egg cartons are not food safety dates. They are commonly used as a guide for stores to know how long they can sell the eggs.

just bake stuff and freeze it. Cookies, cakes and quick breads. Then you always have stuff on hand
I was very surprised to find that even without refrigeration, as long as they’re not left in a hot environment, eggs will last for a couple of months. I discovered this by not having electricity for quite a while, and was forced to rough it.
If you take the time to rotate the cartons every week or two, the eggs won’t float because the yolk won’t have settled to one end( which leaves an air pocket and causes flotation).

You can always scramble raw eggs, 1 or 2 for a recipe and freeze in freezer containers. I have done this many times. freezing 4 to 6 for scrambled eggs. I just set the baggies in a bowl the night before in the frig to thaw. Take advantage of those sales.
They are good until you hear, peep, peep!
