Liquid smoke is NOT a replacement for actually smoking a pork butt!

Caught Boston Butts on sale last week, bought two and smoked them Friday using this recipe… 10 hrs in the smoker at 250 and another 2 hrs in the oven at 300 to acheive pull apart tenderness… used white oak (never any kind of evergreen for smoking… cedar is for lining closets and chests). The rub was good but I didn’t where it is anything to really write home about…)

This website has some of the best recipes I’ve encountered. I always use and prefer Apple wood. Mesquite is somewhat strong, but can also be used.

Why in the world would you use cedar chips to get that “distinctive hickory taste”?

Can of Mango Juice, about 1/2 cup each of extra virgin olive oil and teriyaki sauce and inject for 24hrs. Pull meat out next day and let get to room temperature and rub with peach jam and then add your rub. Smoke with cherry and hickory mixed at 275 degrees for IT of 195. Pull it off wrap in foil then a towel and stick in cooler for 2 hours. Fall apart greatness.

So, has anyone actually made this as is, using cedar wood chips? Just what did it taste like? I have never encountered a smoke recipe that used cedar.
