    Meatloaf Ingredients:

    1 carrot, coarsely chopped
    1 rib celery, coarsely chopped
    1/2 onion, coarsely chopped
    1/2 red bell pepper, coarsely chopped
    4 white mushrooms, coarsely chopped
    3 cloves garlic, coarsely chopped
    2 1/2 pounds ground chuck
    1 tablespoon Worcestershire sauce
    1 egg, beaten
    1 teaspoon dried Italian herbs
    2 teaspoons salt
    1 teaspoon ground black pepper
    1/2 teaspoon cayenne pepper
    1 cup plain bread crumbs
    1 teaspoon olive oil
    The Glaze Ingredients:

    2 tablespoons brown sugar
    2 tablespoons ketchup
    2 tablespoons Dijon mustard
    hot pepper sauce to taste
    Directions To Follow:

    Preheat the oven to 325 degrees F.
    Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree.
    Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg.
    Add Italian herbs, salt, black pepper, and cayenne pepper.
    Mix gently with a wooden spoon to incorporate vegetables and egg into the meat.
    Pour in bread crumbs.
    Next, use your fingers to add the crumbs to the mixture; this should take about a minute. Shape the meatloaf into a ball, and then pour olive oil into a dish before adding the meatloaf ball. Next, form the meatloaf ball into a loaf-shape measuring about 4 inches high and 6 inches across. Bake about 15 minutes or just until hot, and while it’s cooking, combine the brown sugar, ketchup, Dijon mustard, and hot sauce and stir the mixture until the brown sugar has dissolved. When the meatloaf is done, remove from the oven and apply the glaze to it using the back of a spoon. Make sure there’s glaze on both the top and the sides of the loaf. Bake again, this time between 30 and 40 minutes or until the meat isn’t pink and the glaze is baked onto the loaf. Use a thermometer to make sure the meat is fully cooked; it should register at least 160 degrees F.

    Grated vegetables are a good way to add moisture and nutrition to your meatloaf. When I have extra zucchini, I’ll grate some of that & add it. Doesn’t change the taste, just very moist.
    I read the recipe, and after making meatloaf for 30, I’d make the following changes: double or even triple the glaze. Bake for a half hour, glaze it, then bake for another half hour. (And I’d skip the Italian seasoning. Not sure why that would be included with a ketchup-flavored glaze – that might clash.) I always added some ketchup to the meat mixture, too. This is where you can make adjustments. After meat mix is blended, make a small patty, like 2 tbl of meat. Microwave or pan fry til done. Taste. See if you need more seasoning. Add what it needs, then form the meat loaf. I’ve also done 2 smaller loaves, side by side in the pan, so it cooks faster and there are more end pieces. And I’ve also done smaller, individual sized loaves, too. Those bake in about 20 minute, total. If glaze isnt cooked enough for you, broil a min or two at end of baking time.

    Never liked my mother’s meatloaf. Then my hubby managed a restaurant that had meatloaf sandwiches that were to die for. Even the governor came in for these! Secret ingredients were grated carrots and bbq sauce in and on top. 40 years later we still make them this way.
