    I love the old recipe Ann Landers Meat Loaf..you can google it. Then, when almost done, frost with mashed potatoes and bake til potatoes golden brown..

    Years ago I ditched the breadcrumbs and started using quick oats in place of them.So much better in taste and nutrition.I also do not add any sugar.Garlic or garlic powder has to go in it.Ups the flavor and is good for you too.Glaze on top has to be browned some.

    Sherry Morales Eason, if you had spinach cooked well, or in certain dishes, you may like it. One of my favorites is in chicken soup. Have you had wedding soup? Italians make this with a chicken stock base, diced chicken, tiny meatballs, and greens. Some people do endive, I like spinach. We serve this with grated Parmesan and homemade croutons (cubed Italian bread soaked in beaten eggs and Parm – like a savory French toast, baked until brown and toasted.) It was traditionally served as a first course for holiday meals or special occasions, but it’s so good, we’ll make it and have that as our main dish for a meal, just because we enjoy it. I’ve seen people eat 2 or 3 bowls of it, packed with all those greens and no one says “ick” – they inhale it because it tastes so good.
    Greek spinach feta pie is another one that makes spinach so delicious you’d never know it was something healthy. If you try it in other ways, you may find you like it.

    I think grated carrots (not coarsely chopped) are the real secret ingredient to add to meatloaf…I also add about a 4th of a cup of oatmeal; that seems to hold the moisture, too! 🙂
