Here's everything you need for this tasty meatloaf. You'll need just 30 minutes of prep time and 45 minutes of cooking time.

Ingredients To Gather:
Meatloaf Ingredients:
- 1 carrot, coarsely chopped
- 1 rib celery, coarsely chopped
- 1/2 onion, coarsely chopped
- 1/2 red bell pepper, coarsely chopped
- 4 white mushrooms, coarsely chopped
- 3 cloves garlic, coarsely chopped
- 2 1/2 pounds ground chuck
- 1 tablespoon Worcestershire sauce
- 1 egg, beaten
- 1 teaspoon dried Italian herbs
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1 cup plain bread crumbs
- 1 teaspoon olive oil
The Glaze Ingredients:
- 2 tablespoons brown sugar
- 2 tablespoons ketchup
- 2 tablespoons Dijon mustard
- hot pepper sauce to taste
Directions To Follow:
- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree.
- Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg.
- Add Italian herbs, salt, black pepper, and cayenne pepper.
- Mix gently with a wooden spoon to incorporate vegetables and egg into the meat.
- Pour in bread crumbs.
Next, use your fingers to add the crumbs to the mixture; this should take about a minute. Shape the meatloaf into a ball, and then pour olive oil into a dish before adding the meatloaf ball. Next, form the meatloaf ball into a loaf-shape measuring about 4 inches high and 6 inches across. Bake about 15 minutes or just until hot, and while it's cooking, combine the brown sugar, ketchup, Dijon mustard, and hot sauce and stir the mixture until the brown sugar has dissolved. When the meatloaf is done, remove from the oven and apply the glaze to it using the back of a spoon. Make sure there's glaze on both the top and the sides of the loaf. Bake again, this time between 30 and 40 minutes or until the meat isn't pink and the glaze is baked onto the loaf. Use a thermometer to make sure the meat is fully cooked; it should register at least 160 degrees F.

You ruined it with mushrooms
When i make meatloaf o put yams around it makes it moist and a second dish
I love a good meatloaf, but, the last two times I made a meatloaf did not hit the mark.
This makes me want to try again!
That’s when school cafeterias cooked from scratch. Today, most school cafeteria foods come frozen portions, ready to zap & serve….like eating cardboard! 🙁
I use crushed saltines, eggs, onions and Montreal Steak Seasoning. Cover the entire loaf with bacon and dump a jar of Prego chunky vegetable pasta sauce over the top. I’m not a fan of bacon, but I use it to add flavor to the meatloaf. Healthy? No, but fabulous.
And next day, fried meatloaf sandwiches!
